The Recipe


Stage #1
>the PREP

Crusty Rolls

 

 

Tonkatsu Sauce 

6 Tbsps Ketchup
2 Tbsps Worchester Sauce
1 1/2 Tsp Oyster Sauce
1 1/2 Tsp Caster Sugar
2 Tbsps Double Deluxe Soy Sauce
1 Tbsps Mirin
3 Tsp Cider Vinegar
1/2 Onion
2 Cloves Garlic
10g Ginger
1 Tsp Mustard Powder
Pinch of All Spice 

Vegetable Oil

  • Finely dice the Ginger, Onion & Garlic and sweat down in some of the Vegetable Oil.

  • Add in the rest of the ingredients and bring up to the boil - Take off the heat and leave to cool.

 

 

The Pepper

 3 x Romano Pepper

Table Salt
Vegetable Oil

  • Top, tail and half the Peppers and scrape away the seeds.

  • Oil and Salt the Peppers and get a pan on a high heat. Give the Peppers a nice char on each side.

  • Leave to one side until you’re ready to assemble.

 

 

The Pork

2 x Pork Fillets 
150g Flour
100g Panko Breadcrumbs
2 Eggs

  • Start by trimming off all the sinew from the pork fillets

  • Butterfly the pork fillet by cutting right down the centre of the fillet to open it up.

  • Very lightly batter out the pork fillet and cut in to smaller pieces

  • Mix the panko and flour together and set aside.

  • Whisk up the eggs and set aside for the Pane

  • Place the pork into the flour, then the eggs and flour again

  • Keep refrigerated till ready to cook

 

 

Dirty Ranch

2 Green Chillis
2 Garlic Cloves 
20g White Wine Vinegar
1 Small Pork Pie
50g Chicken Stock
200g Mayonnaise
100g Buttermilk
100g Creme Fraich
2 Tsp Dill
1 Tsp Flat Leaf Parsley

Salt 
Lemon Juice

  • Place the Chillis, Pork Pie, Garlic & Chicken Stock into a Blender and blitz to a paste.

  • Add the remaining ingredients and emulsify together.

  • Check the seasoning and adjust accordingly.


Garnish

1 x Granny Smith Apple
1 x Red Onion
1/2 Iceberg Lettuce

  • Slice the Apple (keep the skin on unless your one of the weirdos who get freaked out about the skin of apple). Your call! Slice the apple into thin battons.

  • Peel and half the Onion and very thinly slice.

  • Wash the Iceberg and rip it into whatever sizes you’d prefer.

 

Stage #2
>Cook it baby!

 
  • Right, all we’ve got to do here is cook this piece of Pork! Now there is a couple of ways you can do this but let go with the one and thats both easy and quick but also super tasty!

  • Set up your fryer to 190ºc.

  • While this is heating up, toast off the Buns.

  • Lower your Pork into the fryer 3/4 pieces at a time - don’t overcrowd.

  • Cook for 4 minutes until golden and crispy.
