I used to fucking hate coleslaw, but then again I used to hate everything food related until I was about 21. Different story for a different day. I never understood what was so great about coleslaw or why people would spoil their burger or chicken with a stupid combination of cabbage, onion, carrot and mayonnaise. This was an outsiders perspective as I had never actually tried coleslaw just seen it and judged it from a far. Yup, just like your bratty kid refusing to even try anything because they think it will be gross. I was that bratty kid for far longer than you’re supposed to be. Full of predisposed connotations about this stupid concoction. Then one day, I was told to make a bowl for the Hotels BBQ. I didn't want to make it shit so I remember asking various other Chefs how to make it and combined everybody’s different ingredients and ideas of a great coleslaw. Could of been a disaster but I thought it was the best thing I’d ever made. Bare-in-mind, I hadn’t made very much up to this point in my career. I definitely liked coleslaw after this!  What a shit ending to a shit story. I'm sorry I promise the next one will be better! Ha!

Hey!

Oh so sexy! We love ourselves a good slaw! Yes, we know you can pick up a pre-made one from the shop but there’s nae chance it’s going to taste as good as this! Yeah there’s a fair few ingredients but we promise it’s worth the effort.

The Recipe


Stage #1
>The Prep

The Slaw

1/4 Large White Cabbage, Stem Removed.
2 Red Onions
2 Small Carrots (not chantey size but just small average carrots?
40g Kimchi
2 Spring Onion
1 Red Chilli
1 Green Chilli
1 Lemon (Zest & Juice)
8g Chives
5g Flat Leaf Parsley

Table Salt

  • Prep your veg!

  • Start by removing the stem and chiffonading (long thin slices) your Cabbage. Peel and thinly slice the Red Onion. Place a generous amount of Table Salt over them both (about 2 Tbsp) and leave to stand for around an hour.

  • Finely chop the Spring Onion, Chives & Parsley. De-seed and finely chop the Chillis. Peel and chiffonade the Carrots.

  • Once your hour is up, squeeze out the excess liquid from the Cabbage and Red Onion and mix with all the other vegetables and herbs. Zest and squeeze the Lemon Juice over the top.

 

 

Mayo

As always, we like to make more than we need, so jar up the leftovers and stick it in the fridge. Can't be arsed? Go and buy yourself a big jar of Hellmans Mayo!

1 Egg
1 Egg yolk
15g Cider Vinegar
15g French Mustard
350ml Pomace Oil

Table Salt

  • Blend the Egg Yolk, Vinegar and Mustard together slowly. Once smooth, continue to blend whilst adding the Oil in a slow continuous stream. Stop mixing once fully emulsified and silky smooth.

  • Check your seasoning and Boom! Jobs a good ‘un!

 

 

Garnish

15g Flat Leaf Parsley

Cracked Black Pepper

  • Roughly chop the Parsley (stalks & all).


Stage #2
>Cook it baby!

 
  • Take the amount of Mayo to your liking and mix it through the Slaw. Simple!


Stage #3
>Assemble
