Hey!

So there’s a reason Miso is known as the ultimate Unami flavour. The thick paste is a deeply savoury, toasty, nutty, salty-sweet rich delight! Pair that with our homemade butter and gomasio topping and you’ve got a little piece of heaven for your bread! Thank us later! :)

The Recipe


Stage #1
>the PREP

The Butter

1 Litre Cream
300g Crème Fraîche
15g Salt

Ice Water

  • Place the Cream, Crème Fraîche & Salt into a Stand Mixer with Paddle Attachment. Cover the top of the mixer with a damp towel. Place the mixer on medium, and beat until solid and separating.

  • Take the solid Butter and wash in an Ice bath. repeat the process with fresh water 5 times squeezing the Butter each time.


Gomasio

1 Tbsp Black Sesame
1 Tbsp White Sesame Seeds
1 Tbsps Maldon Sea Salt
1 cm Small Piece Kombu 

  • Toast off the Sesame Seeds lightly in a pan and set to one side.

  • Combine all the ingredients and gently pulse everything together until you break down the Seaweed but not fully breakdown the Sesame.


Miso Butter

400g Butter
100g Shinshu Miso

  • Place your Butter & Miso into the Mixer and beat until the Butter becomes very pale and fluffy.
