Mashed tattie is fo’ sh’ure a British classic. Also, another easy thing to ruin!

The first time I made mashed potato in a kitchen was when I was working as a KP in a hotel. The sauce section was heavy in the shite and so I was asked to get the cooked potatoes and put them through the mooli (a big metal machine that will mix and mash your tattie for you). Being really eager and excited that I was getting asked to do a chefs job I ran straight over to the back sink with the pot and stuck both hands into the drained boiling potato. As you can imagine it scalded me immediately, both hands completely burnt to fuck. I felt like a total twat, but pushed on, got the mash made, and got it up to sauce section.

My entire time as a KP and Commis Chef was constantly like that, just fucking up everything and burning myself. Good times! Keep pushing on!

 Hey!

We think this is the only way to make great mash potato. Cam’s tried lots of different methods in his time as a chef and nothing has come close to this!

Loads of butter and salt - completely indulgent and entirely decadent!

The Recipe


Stage #1
>The Prep

Get Mashing

It should be extremely velvety and taste fucking amazing!!!
If it looks like it might be splitting then add a little bit of milk. 

5 Large Rooster Potatoes
250g Unsalted Butter
50g Milk
40g Table Salt

Maldon Salt
Cracked Black Pepper

  • Dice the Butter.

  • Stab the Tatties several times.

  • Place them on a tray with 40g of Table Salt on the base.

  • Put in the oven @ 200ºc for 1.5 hour or until very crispy on the outside and your knife can slide right through them.

  • Once ready, take them out and leave to cool slightly.

  • Halve and scoop the Potato into a fine sieve and pass through using a spoon, keep going until all the Potato has been passed.

 

 

The Bacon

4 Slices Streaky Bacon

Vegetable Oil
Kitchen Paper

  • Place the Oil into a pan (about 1/2cm depth) and set over a high heat.

  • Chop the Bacon into small dice. Working very carefully and quickly place the Bacon into the Oil and cook until crispy.

  • Remove with a slotted spoon and drain on Kitchen Paper. 

 

 

Garnish

1 Spring Onion

  • Slice the Spring Onion finely at an angle.


Stage #2
>Cook it baby!

 
  • Place your sieved Potato into a pot and cook on a low heat until the excess moisture is cooked off. Bit by bit start adding the diced Butter until its all fully incorporated.

  • Season with a generous amount of Salt and some Cracked Black Pepper to taste.
