Time
So our Herb Butter doesn’t have any of the ‘herb’ that our story is about, but if you fancy adding it in then please do let us know how it tastes. We’re always curious!
Now for the story… Neither Cam and I smoke weed, it’s just not for us for differing reasons. Cam totally rinsed himself as a teenager and became way more paranoid than he could handle. My last teenage experience was one to put anyone off! I dare say I enjoyed a little toke with my friends every now and again. It was something different and a bit of fun but I never really got heavy into it. My cousin, and best mate, loved a bit of the ‘green go’ so we’d often do it together. I remember being round at her house and had a good few puffs of this rather tasty joint. We were upstairs in her room just chatting away. Now when I took a few draws I knew it was super strong but I just figured it was all good. After a couple of minutes this thing floored me! I propped myself up against the wall and for some reason felt the need to roll my neck round and continuously tap my head off of the wall. Possibly ‘bang’ might be a better word for it. My cousin got me up onto the bed, and on her desk were some glow sticks, as you do, I started chewing on them. Guess what next… Yup, lovely neon chemicals trickling all the way down the back of my throat. Which I then proceeded to painted in puke down her lovely mesh curtains. My auntie, a lovely caring woman, super hippy and chilled out, came into the room saw my state and her house and just tucked me into bed. I remember so well her sweet voice trying to comfort me, “Close your eyes darling, you’re going to travel the worlds now!” Little 16 year old me felt rather terrified at the idea and the sheer anxiety I experienced that night has stayed with me since. The best butter if you’re planning a fancy dinner party and want to show off how god damn fabulous you are! Super fresh with a little kick. A great butter to jazz up your bread.

The Recipe
Stage #1

Parsley Oil
This will make more than you need, but it will keep for a good couple of weeks in the fridge, and a month or so in the freezer.
75g Flat Leaf Parsley
50g Spinach
250g Olive OilIce Cold Water
Maldon Sea Salt
J-Cloth
Remove all the Parsley leaves and discard the stalks.
Take 50g of the Parsley leaves and set aside.
Bring up a pot of water to a rapid boil and blanch the rest of the Parsley and Spinach for 15 seconds, remove from the liquid and dunk into the Ice Water.
Squeeze out the excess liquid from the herbs and chop roughly.
Place both the fresh and blanched herbs into a Blender and pour in the Oil. Blend on full for 5 minutes until completely smooth. Pour the Oil into a container and leave to stand for 24 hours.
Pour the Oil through some J-Cloth and leave to drain for as long as possible.
Season to taste.
Gremolata
50g Flat Leaf Parsley
1 Garlic Cloves
1/2 Green Chilli
1/2 Lemon
25g Parsley Oil
Maldon Sea Salt
Lemon Juice
Pick the Parsley Leaves and discard the stalks. Roughly chop the 1/2 Chilli & Garlic and zest the 1/2 Lemon.
Place them into a Blender alongside the Parsley Oil. Pulse slowly and adjust the seasoning with Salt & Lemon Juice.
Pulse until it’s not a puree and not a big chunky bastard. Somewhere in the middle and you’re happy.
Butter
150g Butter
3 Tbsp Gremolata
1 Tbsp Parsley OilMaldon Sea Salt
Place all the ingredients into a small Blender or Spice Grinder and blitz until fully emulsified together
Check your seasoning and store in a container with a lid.
