Time
Chilli is one of my favourite things to cook - always has been. It is in fact the second dish I ever cooked. I always associated chilli with big fuck-off American parties, proper bluegrass barbecues: banjoes everywhere in sight; people playing washboards; drinking moonshine; and chilli cook offs. It has always fascinated me - a group of guys all getting together cooking chilli.Tasting it and then getting a fucking sash or something at the end. It is therapeutic. Starting off with a base of simple ingredients and building layers of flavours making it deeper and more intense. Slowly cooking it over a multiple number of hours and developing the depth of flavour. It’s seriously fun and if I have the chance I would one day love to be involved in a big fuck-off American, moonshine swirling, banjo playing, bluegrass barbecue chilli cook off!

This is quite a big recipe that requires quite a few ingredients. But once you’ve bought them, you’ve got them! Thats a win win situation. Good for the pantry and good for use throughout this website!
